Gluten is a group of proteins found in certain grains, including wheat, barley, and rye. It helps give dough its elasticity and allows bread and other baked goods to maintain their shape and texture.

Figure 2. Common foods with and without gluten.

Foods that commonly contain gluten:

  1. bread
  2. pasta
  3. cereals
  4. couscous
  5. pastries

Gluten can also appear in less obvious products such as:

  1. Salad dressings
  2. Soups
  3. Sauces
  4. Processed meats
  5. Candy
  6. Medicine

Naturally gluten-free foods:**

  1. rice
  2. potatoes
  3. nuts
  4. quinoa
  5. corn
  6. tapioca.

**It is important to note that some foods that are naturally gluten-free can still become contaminated with gluten during processing or preparation. For example, oats are naturally gluten-free, but many are processed in facilities that also handle wheat. Individuals with celiac disease are often advised to choose oats specifically labeled “certified gluten-free.”
